Eating what the land gives
At Eden Atlas, the kitchen follows the seasons and whatever produce is available. Our cook prepares a simple, generous family Moroccan cuisine every day, inspired by the recipes of the douar.
Slow-cooked tagines, couscous, tanjia, seffa medfouna, fish from the lake, fresh salads and homemade sweets make up menus that change from day to day.
Prepared on site, every day
Every meal is prepared in the Eden Atlas kitchen from Moroccan recipes handed down and cooked with patience.
There is no fixed menu. Dishes vary with the season, the available produce and the mood of the day. This simplicity allows us to serve fresh, generous food true to the flavours of the region.
Three moments at the table
The Berber breakfast
Included in the nightly rate, it brings together Moroccan breads and specialities, eggs, seasonal fruit, juice, coffee and tea.
Lunch
Offered by reservation, it is a menu prepared according to available produce and the wishes shared in advance.
Dinner
Served by reservation, it is an invitation to traditional Moroccan cooking around a tagine, a couscous, a tanjia or another speciality chosen for the meal.
Carefully chosen produce
Menus change with the seasons, the harvests and the produce found from local growers and nearby markets.
Vegetables, fruit, herbs, meat, fish and spices are chosen for their freshness and quality. What is available naturally guides the recipes cooked each day.
Indoors or in the garden
Depending on the season and the weather, meals are served in the dining room or in the garden, among the olive trees.
Lunch and dinner are offered by reservation to guests staying at Eden Atlas. Outside visitors may also request a table, subject to availability.
